Bake with the 'Cake Boss' Buddy Valastro
Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and additional whites or yolks, and mix at high speed until fluffy and smooth, approximately 2 minutes. Do not overfill. Bake minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.

Blend on low speed for 30 seconds or until evenly mixed, then beat on medium speed for 2 minutes. Pour batter equally into cupcake pans. Bake at degrees for the bake times indicated on the box mix. The cupcakes are done when a toothpick inserted into the center of the cupcake comes out clean. Cool pans on wire rack for 15 minutes before removing the cake from the pans.
